Be The Good

I was challenged by my good friend Jackie from Little J Style to #BeTheGood. I’ve been challenged to do “good” for someone else whether it be large or small. The trick is you only have 1 day to get the challenged completed, how fitting for us procrastinators 😉

So, with a day ahead of me I thought & thought of what I could do to help or give to someone else. Of course I way over thought it & was making everything too complicated. Which lead me to this thought – “Why do we over do it when we are ‘challenged’ to do something? Why do we have to make it so complicated & over the top?” – Am I the only one who does this? I feel like it has to be perfect, that it has to be so impactful and leave a lasting impression. WHY?! There is so much pressure to make everything ‘picture perfect’ that we lose sight of the small & simple things that are just important. I love small & simple things. I love when my sweet family, friends, and even strangers do the small & simple things for me so why couldn’t I just do the same in return. I truly feel that there is no measure to a “kind deed” so whether it’s over the top or not a deed is simply a deed

So, after the woman in me over analyzed this challenge I was able to pull my wondering, over zealous brain down to earth and said, “Hum, well I am making tacos tonight & with tacos always comes Cilantro Lime Dressing so why not double the batch and give it to a friend!” Genius! So, this is exactly what I did. I have attached the receipe I use for this dressing (yes, it’s just like the Cafe Rio one – which I might add Cafe Rio is much better than Costa Vida). 

All in all, I am grateful I was able to share a part of our family dinner with a dear friend of mine who was surprised and so excited. As much as she appreciated my little surprise I think that I appreciated what this challenge taught me more. I learned (or re-learned because it’s something I know but have to remind myself every once in awhile) to not over do it, to help when you can, and to give a little extra everyday. I was talking to a friend a couple weeks ago about all the opportunities we miss out on serving others because we think to ourselves, “Is this enough?”. Think about all the times you missed out on giving to someone because you listened to the evil little voice inside of your head telling you, “No, do more. No, that’s not nice enough. No, they will think you’re weird”. That little voice gets so much air time in our head that we end up not doing anything at all. What a shame. So, as Nike says, Just Do It. Do not over think it or doubt yourself. Like I said a deed is a deed and will always be appreciated. Thanks for this challenge Jackie! CILANTRO LIME DRESSING RECIPE:
1 packet of buttermilk ranch dressing
1 Cup mayonnaise 
1 Cup buttermilk (the smallest carton is perfect)
1 bunch of cilantro
2 tomatillos, husked
1 Jalapeño (take the rib and seeds out)
Garlic powder (just a few shakes)
Juice from 1 lime

DIRECTIONS:
In a blender blend  the buttermilk, mayo, garlic powder, and dressing mix, until nice and smooth. Dice up tomatillos, jalapeño, lime juice, and  cilantro, and add to the mixture. Blend all the ingredients until you reach the consistency you want. Chill in the refrigerator for around 30 minutes to thicken. 

NOTE: This is my favorite recipe for this dressing because I feel like it is a great mixture of all the flavors. I have tried many throughout the years and this one is the winner. You can add more jalapeño if you want or less buttermilk to get a thicker consistency. It’s easy to customize! I use the expiration date of the buttermilk to determine how long it will last. It also freezes really well! Enjoy!

  2. I had to print out this recipe! Sounds really good. And think the campaign is a great way to remind ourselves to not be too self centered and to bring around good karma by being kind to others.
