I had a couple extra bananas on hand that I knew we weren’t going to be able to eat before they were too ripe so Banana Blueberry Bread it is! I love Banana Bread but I usually like to add something to it. This time blueberries were the winners and I’m ever looking back! It has been my favorite combo! I also added a little lemon zest to give it a little zing! This recipe is so easy and foolproof!
I put mine in little mini bread pans but I’m sure you can use a large bread loaf pan or anywise you choose! I do love the mini loaf pan because I can make little gifts for our neighbors!

Ingredients:
- 2 Eggs
- 1/4 Cup Buttermilk (I used whole milk w/ 1 teaspoon of white vinegar – let sit for 5 mins)
- 1/2 Teaspoon Vanilla Extract
- 1 Cup Mashed Bananas (3 medium size)
- 1 Cup Blueberries + a couple extra for the top
- 1 Lemon – Zested
- 1 3/4 + 2 Tablespoons cups all-purpose flour
- 1 Teaspoon Baking Powder
- 1/8 Teaspoon Baking Soda
- 1/2 Cup Butter, at room temperature (I used salted)
- 1 Cup Sugar
Directions:
( 1 ) Preheat oven to 350 degrees F. Lightly coat loaf pans with nonstick spray.
( 2 ) In a separate bowl, combine flour, baking powder, and baking soda.
( 3 ) In the bowl beat butter and sugar on medium-high until light and fluffy, about 2-3 minutes. Add in eggs, buttermilk and vanilla until well combined. Add in mashed bananas until well combined.
( 4 ) Slowly add flour mixture to the sugar mixture at low speed, beating just until incorporated.
( 5 ) Add blueberries & Lemon Zest and gently toss to combine.
( 6 ) Scoop the batter evenly into the loaf pans. Place into oven and bake for 28-33 minutes, or until a toothpick comes out clear. The smaller the loaf pans the shorter the bake time.
( 7 ) Remove from oven and let cool for 20 minutes before inverting the cake onto a cooling rack.
